How many amps to house/shop?

Sorry for being lazy and not searching, but I'm sure the topic can be revisited occasionally :)

Assuming I close on my new home in a few weeks, I'm looking to build a 1-man, ~1,000 sq ft shop/garage from scratch in a residential area. One machine at time, plus DC, plus adequate LED lighting, stereo,...

I don't have the machines selected, but imagine a large 5HP DC and an 8' Euro slider or 12" J/P as the power hogs.

A 100AMP service to the shop (with its own breaker box) seems like a good target, waddya think? (3 phase not available).

Anyone run into problems with a 100 AMP service to the shop?

Also, current house is ~2500 sq ft, south Texas (hot). How much service to the house and shop together, 250 AMPs? 300 AMPs? I suspect the house has a 200 AMP service today, I actually haven't seen the house yet in person, bought in based on my kids' recommendation (and pictures), which is only slightly scary.
